If you need a readable website view with meaningful conversion events, Plausible may already be the right fit. Look beyond the revenue event

These layers can agree, but agreement has to be established. An event value is not automatically a reconciled payment.
A browser purchase event can be missed, repeated or sent with the wrong currency. A payment record can be valid but have no usable visitor link. A refund can arrive after the reporting period. Those are distinct issues, and a tool should help you keep them distinct.
Write down which source of truth owns each number. Your payment system owns verified transaction facts. Your tracking implementation owns captured acquisition evidence. Your attribution rule decides how the two connect. No feature label removes the need for those definitions.

There is also a legitimate privacy trade-off. Cookieless paths are not equivalent to a persistent person profile. If you want to follow identified behaviour across a long sales cycle, assess the identifiers, access controls and consent implications explicitly. Do not assume another cookieless product will manufacture continuity your implementation intentionally does not collect.
Make the migration a measured change
Keep the old setup long enough to compare a representative period, where your privacy and performance requirements allow it. Record the reason for each mismatch rather than optimising for identical totals. Visitor definitions, time zones, bot filtering, conversion windows and currencies can all differ.
